Shrimp Pesto Pasta

We first made this pasta while traveling in Sardinia, Italy.  It was while traveling we discovered our interest in sampling and cooking foods from different cultures.   This pasta dish is so simple, but so tasty and fulfilling!

Ingredients:

- angel hair pasta (or any other kind of pasta would work!)
- Extra Virgin Olive Oil (EVOO)
- small shrimp
- tomato, diced
- good Parmesan cheese
- pesto sauce (either store-bought, or prepared on your own according to the recipe below)

Steps:
1. Cook pasta according to directions.
2.  Put a couple tablespoons of EVOO in a pan and heat on medium-high heat.
3. Add shrimp and saute.
4.  Add pesto sauce and let simmer.
5.  Add diced tomato and let cook for another couple minutes, or until everything is heated through.
6. When all is thoroughly heated, pour the sauce and shrimp over the pasta and toss together.
7. Top with Parmesan cheese and serve!

Pesto Sauce Recipe:

Ingredients:
- basil
- pine nuts
- Parmesan cheese
- Extra Virgin Olive Oil

Steps:
1. Combine all ingredients in a blender or food processor.
